It’s been awhile, so just to recap, Weekly Food Highlights is my way of showing you some of the best eats recently. Sometimes, I’ll show recipes I’m working on or have made in the past, and other times you may see another recipe from a fellow blogger that I like.
1. Low Sugar Buckwheat Brownies
Ahhh, probably my most proud accomplishment recently, these brownies.
These are made with buckwheat flour, which I seem to be quite fond of lately, and they’re nice and fudgy. Because I added a very modest amount of sweetener to the batter, I went a bit overboard with the chocolate topping, sort of going for a molten lava brownie, if you will.

2. Apple ‘Nachos’
Would you believe I thought I came up with this recipe, lol?
True story: I’ve had a peanut butter obsession lately, which stinks since I don’t tolerate it very well. Anyway, I thought it would be easier on me to mix the peanut butter with some milk, thus diluting it a bit and making it more tolerable. Then, I thought to drizzle it over apple slices, a la cheese over chips, thus igniting the apple nacho idea!
Well, turns out this has been a thing for quite a while. It must have gotten stuck in my subconscious somehow!
The idea, however, is still a great one especially for kids (not that they need reason to eat apples and peanut butter). 🙂
3. Spanish Chicken and Rice
If the brownies were my best sweet recipe of the week, this was my best savory…
This Spanish chicken and rice dish is perfectly flavorful, reminding me of an old boxed favorite I used to buy. The addition of green peas lends a nice bite of sweetness, balancing out the whole dish. Yum yum!
4. Sweetener-Free Muesli
My husband and I are quite fond of overnight oats, but his version has a copious (and I do mean copious) amount of added honey.
I wanted to show him that the recipe could be delicious without any added sweeteners, and judging by the fact that all my kids eat this recipe up, I’d say I’ve done just that!
With natural sweeteners like coconut, raisins and apple, this recipe needs no extra sweetness to make it completely delicious and downright crave-able.
5. Creamy Cilantro Dressing
I am constantly trying to find new ways to enjoy my salads, primarily by focusing on changing up the dressing.
My most recent salad companion has been in the works for months now, and I think I’ve finally hit upon a magical combination. If you enjoy spice and tang and smoky-ness, I think you’ll like this one too!
