In light of a few personal revelations, I thought I might change up What I Ate Wednesday, highlighting some of my most memorable meals from the entire week, instead of focusing on one day of food.
I try many recipes throughout a week, some my old favorites, some new tests, and some from other bloggers.
In this post, I may be reminding you of something I’ve created, linking to another great recipe I’ve tried and liked, or just posting something ‘in the works’ that you may want to see the recipe for.
If the latter is true, please don’t hesitate to let me know in the comments.
If you’ve done this in the past and I haven’t ultimately posted the recipe, I’ve most likely found a flaw in the execution process that I’m unable to work around, so it wasn’t worth posting.
So, here we go, let’s give this a try!
1. Not Very Sweet Chocolate Truffles
I made these one day when I was craving chocolate, but I only added one teaspoon of honey to the batch.
I also added in some coconut butter to the batter, which has its own natural sweetness, and my husband and I ended up really enjoying them! Jadie did too, but Nat was not digging them. They’re free of nuts too.
2. Turmeric Eggs Stir-Fry
I’ve been reading about adding turmeric to eggs for a while now, so I finally gave it a go!
I really enjoyed the taste, and I added them into a new stir-fry recipe made with red cabbage, broccoli, and spinach.
Queen of stir-fries over here, and the mother of two eaters who hate them. Wah. 🙁
3. Tart Lemon Bars
Everything I’m making these days is not very sweet, which I’m sure you’re all tired of hearing about.
These raw lemon bars were no exception…
That is definitely NOT a flattering picture, and at first bite, these were NOT what I had envisioned. For instance, that crude smear of coconut butter on the top was supposed to be a ‘cream’ layer of sorts.
Despite my first impressions of the taste, I could NOT seem to stop eating these, so I figure there might be something there to work with.
4. Buckwheat Chocolate Chip Cookies
Oh this blasted recipe. I’ve literally gone through about 15 batches of these, changing the amount of flour, the salt, the chill time, the bake time, the mix time, blah, blah, blah, but I think!!…I’ve finally got it kinda right.
Made with just buckwheat flour and relying mostly on the chocolate chips for sweetness, I really adore the ‘sandy’ texture of these cookies, and they’re kinda my new fave.
5. Spaghetti Squash Saute
I had too many cookies and bars this particular day, so I was hankering for a good low carb meal. For that, I generally rely on the almighty spaghetti squash…
I bought some organic baby broccoli on sale, so I threw that in along with some tomatoes, peas, capers, lemon juice, shallot, garlic, chicken, and basil. I topped it with a ton of parmesan, and it was delicious!
So there you have it, all new recipes this time.
