    What I Ate Wednesday (10/21/15)

    Breakfast

    My mom recently brought me some farmer's market eggs to try...

    She pays seven dollars a dozen for these and boy, are they worth it! The taste was great, and I noticed that upon cracking them, the ordinarily cloudy whites were really clear, and there weren't any of those weird fat globs floating around.

    I paired them with a piece of Ezekiel toast smothered in raw honey.

    Snack

    I've been really inspired, recipe-wise, lately, so I'm cooking and baking up little storms!

    These blueberry pear bars are totally fruit sweetened and totally free of any added oils. We all ate them up, and my husband in particular loved how moist they were!

    Lunch

    I've been playing around with the oils and fats I consume, hence the above bars and this spelt pizza crust, free of yeast and oil. I shared this with my youngest daughter one day, and we literally demolished the entire thing it was so good! I added some garlic powder and herbs de Provence to the crust, which really livened up the flavor, and I topped my side with Homemade Pizza Sauce, mushrooms, spinach, and broccoli.

    Snack

    For snack, I had an eggplant withering away, so I sliced it up, brushed it with some olive oil, and roasted it...

    ...my absolute favorite quick way to eat it!

    Dinner

    For dinner, I had some leftover spaghetti squash in the fridge, so I paired it with some more Homemade Pizza Sauce, sprinkled it with a bit of raw cheddar cheese, and baked it until the cheese was melty.

    I paired it with a large helping of roasted broccoli spritzed with lemon juice and lots of black pepper.

    Dessert

    For dessert, I had a couple of my Pumpkin Seed Flour Brownies and a cup of ginger tea...

    The brownies are so fudgy and delicious right out of the fridge, and the tea makes a lovely accompaniment.

      Hi Lauren....I am also eagerly hoping you will post the blueberry pear bars recipe! I found your vegan eggs...we still make them to this day...and I have loved your posts ever since!

      fresh eggs are the best! i have 2 chickens now for over a year. and i live in a neighborhood. we have a 4ft fence that they can't get out (now that wings are clipped) and a coop hubby made. one is a Leghorn... the BEST layer ever! it's so exciting when i get a double-yolk... so cool. plus, she runs to me like a dog when i go outside. hilarious. if you need to know ANYTHING about raising chickens, get a hold of me. i know everything now :/
