    What I Ate Wednesday (10/2/13)

    Breakfast

    I've been craving peanut butter toast in the morning...

    ...in order to cut the fat and up the protein, I've been making a dessert hummus spread by blending cannellini beans, peanut butter, cinnamon, and honey. It's delicious on sprouted wheat toast, in smoothies, or even by itself.

    Snack

    I recently made a batch of sweet and spicy pumpkin seeds that I've been snacking on. With touches of maple syrup, soy sauce, and cayenne, these hit the spot!

    Lunch

    I made a huge batch of my broccoli pesto, so I've been enjoying sandwiches with it at lunchtime...

    ....I also piled on some unseen alfalfa sprouts. The coconut flatbread is so quick and easy, and it tastes delicious with the pesto.

    Snack

    I'm so happy that apples are plentiful (and cheaper) than they were during the summer! I've been eating up to three every day. My favorites are ones that are firm and crisp, such as Pink Lady.

    Dinner

    I often eat vegan when my husband isn't home, but this particular night he was, so I made one of his favorites...

    ...I layer chicken, sauteed vegetables, and long-grain brown rice in a large baking dish and then I top it with yogurt cheese. This was a welcome and hearty dinner after a good afternoon workout. I only ate a small amount of the chicken, as meat has been less and less appealing to me lately.

    Dessert

    It seems like there's a new dessert in the works each week...

    ...these pumpkin pie bars are the newest creation I've been gorging myself on, and I'll be sharing them soon! 🙂

      I'm confused. I thought you ate gluten free. What brand toast did you have? Are you able to eat sprouted bread now? That would be awesome!

      Wow, I am definitely going to try the dessert hummus, the minute you send the ingredient amounts!!! What a BRILLIANT idea to lower the fat content as I tend to want to put peanut butter and honey on everything, but the fat grams add up fast!! I also am planning to try the coconut flour flatbread and the broccoli pesto!!!! Thanks for your amazing ideas!!!!!!

      Your day of eats looks wonderful! I'll eagerly await the recipe for the pumpkin pie bars! I love dessert hummus, too. So good just by the spoonful, and it always tastes so decadent. What a great breakfast treat!

      Broccoli pesto in sandwiches is, hands down, the best. I love that you added hemp seeds to yours, it's a great add-on. I must try it soon!

      I would love to have some dessert hummus or peanut butter on toast today! What a clever seasoning - I need to find some pumpkin seeds and work with it!

      I've tried a vegan dulce de leche (milk caramel) tablet in Buenos Aires and quince jam on quinoa cookies, which was so good!

      So trying that dessert hummus! Pb made into lower fat hummus is so smart ... thanks SO much for the idea. Loving that pesto, too! Pb and pesto are two of my favorite things and so its great to have lower fat options.

        Hi Kim,

        I buy it from Trader Joe's, and it says it's made from yogurt and lactose-free. It has a nice tang to it, and, psychologically, I just feel healthier eating it. 😀
