I’ve been enjoying this ‘sorbet’ more and more lately. I blend frozen mango, frozen berries (usually blueberries), lemon juice, water, and raw honey until well combined. I only add enough water to get it moving (since I’m using a regular blender), and it comes out with an ice cream-like texture.
I’ve been enjoying my Pumpkin Pie Bars for snacks…
…with no sugar and a vegetable in the filling, I have no guilt about indulging in these!

I made a delicious dressing by blending lemon juice, olive oil, fresh basil, salt, pepper, and a cucumber. The cucumber gave the dressing a creamy consistency that was just lovely.
A bit later in the afternoon, I had a bowl of vegetable beef and rice soup. I try to make this a couple of times a month, as it’s one of a few meals that both my daughters love. I added in a few handfuls of chopped kale to make it even more nutritious.
If I’m not eating this Cauliflower Pizza Crust, I like to make a 100% whole wheat, fat-free crust that uses applesauce and is ready quicker than most yeast-based doughs.
I topped this one with a generous portion of chopped broccoli and some sliced red onion.
I’ve been so frustrated with all the candy molds I’ve previously purchased, so when I saw this idea for ice-cube chocolates on Pinterest, I had to try it! I made these chocolates with peppermint extract so they were akin in taste to Andes’ mints. Yum!
