    What I Ate Wednesday (10/30/13)

    Breakfast

    Smoothies and eggs have been on the morning menu. This delicious smoothie had my Homemade Brown Rice Milk, carob, avocado, raw honey, cinnamon, vanilla, a cut up zucchini, and ice. I buy a raw carob that's a bit more mild than toasted, and it gives it a chocolate 'malt' taste that I love!

    Snack

    I've been getting over being sick, so I've been trying to cram in a lot of nutrition. This green juice contained cucumbers, celery, kale, lemon, ginger, and apple. The apple gave it the perfect amount of sweetness, and the lemon and ginger combo made it so refreshing!

    Lunch

    I've been making this quinoa dish more and more lately. It is nicely spiced with coriander, turmeric, and cumin, and (though peas are pictured) I love to add in roasted potatoes or broccoli with it. The quinoa is very filling and it holds me over longer than my usual salad.

    Snack

    Detox Fudge baby....

    ...this stuff has been a staple for me lately. I love that it's sweetened with a combination of honey and stevia, and the protein from the beans really keeps me satisfied more than other treats.

    Dinner

    After all the fudge and quinoa, a light (but large) salad hit the spot this night for me. This one had a mix of green and iceberg lettuces, cucumbers, grated carrot, raw chopped broccoli, red onion, pumpkin seeds, raisins, and a cucumber basil dressing that I've finally perfected. I also topped it with more than a few grinds of fresh black pepper, as I've been craving the stuff lately.

    Dessert

    For dessert, I made a batch of what I hope to call 'The Best Gluten-Free Chocolate Chip Cookies Ever'...

    ...still working out some kinks, but boy, do they taste yummy!

      You have just made me hungry! This is a good one nutritional menu. I will truly try it especially that cucumber, kales, ginger juice. Good combination there. ~ Anetta
