I recently bought a bag of cacao powder to use in smoothies and for homemade chocolate. I just love the taste and the energized focus it gives me in the morning! I had bought a different brand in the past that didn’t agree with me very well, but my new Vitacost brand is great (and it’s priced well too).
My favorite raw chocolate smoothie has cacao, avocado, honey, hemp seeds, coconut water, and a handful of frozen strawberries.
I like to throw in a handful of goji berries for texture and taste. It’s such a delicious creamy treat, I crave it almost every morning!

After about five trials, I think I finally have it perfected! Moist with a great spice blend, and my kids like it!
For lunch, I had one of my favorite pairings: vegetable soup with a cheese crisp.
The soup was a literal ‘kitchen sink’ type recipe. Picture me just cutting up and throwing in just about every random, half-used veggie in my fridge. Onion, garlic, celery, carrot, cabbage, zucchini, peas, corn, tomato puree, and a can of chickpeas were all in the soup, which turned out really delicious!
While it was simmering, I made a batch of my Spelt Tortillas for cheese crisps, which goes great with the soup.
Since my husband and I bought 40 pounds of chicken, I’ve been trying out various recipes with it. I’ve had a hankering for curry lately, so I made a semi-spicy chicken curry and paired it with a big batch of basmati rice.
I could NOT stop eating this, and I actually wrote down the recipe, so I’m excited to make it again and perfect a few things with it.
For dessert, I treated myself to a few pieces of my Peppermint Ice Bark. Such a refreshing way to end the night!
