Lately, I've been having my Choco-berry Smoothie Bowl just about every morning...
This is a constant go-to for me during the week, especially if I have a morning workout. The caffeine from the cocoa powder gives me a great burst of energy and focus!
I've just been topping it with a handful each of cacao nibs and goji berries.
Lunch was a quinoa stir-fry complete with chopped snow peas, kale, and cherry tomatoes. I stirred in a dollop of homemade nut and seed-free pesto, which really set it off nicely!
For a kick of protein, I soft-boiled an egg (my first!) and placed it on top of everything. The runny yolk made a great 'dressing' of sorts, and I am now officially in love with soft-boiled eggs. 🙂
I always have a few pieces of fruit in a day, and today was no exception...
I added in a bit of homemade pumpkin seed butter for a bit more protein.
Dinner was a delightful mix of rice, chicken, beans, and vegetables...
I often like to use a combination of beans and chicken to make a meal with more staying power and a lower price, as organic chicken has really spiked in cost lately.
What made this particular dish really special was the inclusion of certain spices, one of which was nutmeg! This is a recipe I'm hoping to share soon for those of you that might need a good dinner idea.
In the mood for something sweet and searching for a reason to use my new carton of whipping cream, I made the family some crustless pumpkin souffles...
SO delicious! Pumpkin pie without the crust, sweetened with a combination of honey and stevia, and topped with a dollop of real whipped cream. The whole family ate these up!
