I have been an egg MONSTER lately, so they are turning up in quite a few meals...
This morning, I fried a couple in some ghee and laid them on a slice of Great Harvest's High Five Fiber bread for a kind of open-faced sandwich. Did I mention I also love pepper? 🙂
We recently got a Costco card, which is awesome because they sell some of my favorite foods in bulk.
Oranges, cheese, and organic Fuji apples are just a few of the items we've bought, so I've been snacking on the oranges and apples daily....
More eggs for lunch, this time scrambled and placed atop a cheesy sprouted tortilla with a spread of salsa. This was so delicious and filling!
At the beginning of the week, I made a big batch of my Hearty Vegetable Soup, so I've been snacking on it throughout the week to get a dose of much-needed veggies.
I was out of green beans on the day I made this, so I added in some chopped zucchini instead, which was still delicious.
For dinner, I threw together a skillet 'lasagna' of sorts. Instead of lasagna noodles, I used spaghetti squash and mixed in some of my Homemade Pizza Sauce, sautéed onions and mushrooms, and chopped kale. I then topped it all with some yogurt cheese and let it simmer on the stove until the cheese melted.
I was craving something cold and creamy for dessert, namely chocolate avocado pudding!
It's been a while since I made this, but it was so delicious! I added in some frozen berries to make it nice and frosty, which really elevated the flavor and provided some natural sweetness.
