    What I Ate Wednesday (1/15/16)

Published: Jan 6, 2016 · Modified: Jan 5, 2016 by Lauren · This post may contain affiliate links · 2 Comments

    Breakfast

Most often, I start the day with a morning smoothie...

...this one was crammed full of chard and spinach, along with a handful of fresh basil, a green pear, half an apple, one celery stalk, and half of a lemon.

This is surprisingly good, but more than that, it really gives me a leg up on the day in terms of energy and mood.

    Snack

    Lots of fruit lately...

...apples, pears, and oranges are all among my daily eats.

    Lunch

For lunch, I had my Greens and Beans dish...

I'm such a fan of this lately, as it's quick, easy, and delicious!

    Dinner

For dinner, I tried a new recipe in the form of a curry vegetable stir-fry...kind of combining a dash of Indian with a smidgen of Chinese. I sautéed a bunch of different veggies, added a handful of chicken, and made a sauce of vegetable broth, curry powder, and soy sauce. I served it all over a bed of brown rice, and it was just delicious!

    Dessert

For dessert, I made some sugar-free peanut butter cups...

...not the most appetizing shot there, but they were pretty awesome considering the whole no sugar thing!
