This is pretty much a daily smoothie for me, but I tweak it a bit each time, depending on what greens and herbs I have in the fridge. The basil has been a refreshing change lately.

I pour my Homemade Coconut Milk into a mug, add some stevia, vanilla, frozen berries, and drizzle it all with a bit of raw honey. Probably my favorite snack right now!
For lunch, I had a quick quinoa stir-fry, with cherry tomatoes, chopped chard, and fresh nut-free (homemade) pesto stirred in. I had a side of eggplant chips with it, and sprinkled everything with a bit of apple cider vinegar before eating.
Rice and beans have been a constant around here lately…
With all the cardio I do, I crave carbs like nothing else, and Mexican food is my go-to! I like to make either these Refried Beans or the black bean recipe from Greens and Beans. I then make my Spanish Brown Rice, to which I add tons of cilantro (I love cilantro!).
I serve it with baked Ezekiel Sprouted Corn Tortillas. I bake them until they’re crispy, after brushing them with a bit of olive oil, and we eat them like chips. I personally like these better than the store-bought tortilla chips, and I like that I can control the fat content.
I’ve been working on a few lower sugar cookie dough bite recipes, one of which is centered around my Pumpkin Seed Butter and coconut flour…
These turned out really good, and hit the spot at the end of this night!
