    What I Ate Wednesday (12/10/14)

    Breakfast

    I've been making homemade breakfast burritos for the hungry mornings...

    My Homemade Tortillas (minus the flax seeds) topped with grass-fed cheddar, scrambled eggs, and Homemade Salsa. The combination of eggs and cheese really keeps me full until early afternoon, and it all tastes like such an indulgence!

    Snack

    I made a batch of my Creamy Lemon Broccoli Soup last week, and have been enjoying it for snacks and lunches...

    It's so easy and the small addition of lemon juice really brightens up the flavor so well!

    Lunch

    I usually buy a spaghetti squash (or two) each week to make a kind of 'lasagna' for my girls and myself (one of our favorite dinners to enjoy together)...

    It's meatless, so we usually make this when the hubby is at work, as he doesn't tend to appreciate meals sans animal protein. :-/

    This day, we heated up the leftovers for a delicious lunch!

    Snack

    I've had a strange grapefruit craving the past couple of months, so I've been snacking on them occasionally...

    If only they wouldn't squirt me in the eye with each bite!

    Dinner

    For dinner, I made a scrumptious beef and broccoli stir-fry...

    This one isn't on the blog, but I have plans for it! If you have some rice or quinoa ready, this meal comes together really quick, which is nice for busy moms.

    Dessert

    I had a crazy lady idea this week to make chocolate hummus!

    I just kind of winged it, but really came up with something I couldn't stop eating! I also made some gluten-free graham crackers to dip into it, and my girls and I were in heaven!
