    What I Ate Wednesday (12/2/15)

    Breakfast

    I took a stab at making my own single serve English muffin this week...

    I have seen these float around on various blogs for quite some time and wanted to give it a shot! I used a combination of pumpkin seed and coconut flours, but it still tasted a bit 'eggy'. I love the concept though, so I may keep trying to tweak it a bit. I also had a couple of unpictured eggs on the side.

    Lunch

    For lunch, I had a 'Hugh Jass' salad made with green leaf lettuce and a blend of dark greens. I also threw in some grated carrot, red cabbage, cucumbers, grated beet, red bell pepper, chopped chicken, raisins, and pumpkin seeds. I topped it all with a creamy cilantro dressing similar to this one.

    Snack

    For snack, I cut up a couple of red potatoes to roast...

    This is such an energizing snack! I like to add a sprinkle of this Bragg's spice blend, which really complements the flavor of the potatoes, and I just pop them like potato chips!

    Dinner

    I made a new stir-fry for dinner...

    ...new to What I Ate Wednesday, rather, as I've been enjoying this one about once a week around here.

    I combine mushrooms, cabbage, and chicken with a good deal of garlic and a sprinkle of paprika. I serve it over some jasmine brown rice, and it has become a favorite of mine (and very easy to throw together)!

    Dessert

    With it being Christmas time, I have been craving molasses cookies, so I set out to make a healthy version of them (of course)...

    These are made with all chickpea flour, making them gluten-free, grain-free, and nut-free, similar to these cookies. They're also free of dairy and eggs, making them quite allergy-friendly, which is a huge plus in our house. Everyone enjoyed them, so I may post them soon!

      I was totally craving just simple roasted red potatoes the other day! Haha! Sometimes thats all you need!
