    What I Ate Wednesday (12/3/14)

    Breakfast

    It's been a while since I've done one of these posts, but I've accumulated some great meals over the last few weeks that I'm excited to write about!

    I've been craving eggs like a madwoman, so they've found their way into many a breakfast...

    I tried my hand at this frittata one morning, and it turned out delicious!

    I sautéed some shallot with a handful of crimini mushrooms, then I added in some chopped kale and white cheddar cheese.

    It was a real treat (and so filling), but I had some fresh raspberries on the side with it anyway. 🙂

    Snack

    I've been loving my Cracker Jack Pecans for a sweet, crunchy treat in between meals...

    They're so delicious and so quick to make if I need a new batch!

    Lunch

    Two of my favorite foods (brown rice and eggs) have found their way into my recent obsession...healthy fried rice!

    I loooooooooooove fried rice and have been perfecting this recipe for a while, so I'm excited to share it soon (for those of you that have the same taste). 🙂

    Snack

    My girls and I shared a Creamy Chocolate Shake for an afternoon snack (old picture).

    I sub the walnuts for hemp seeds when I share it with Jade and it's just as delicious!

    Dinner

    I made one of my favorite dinners this night...

    My Apple Juice Chicken paired with lemon green beans and paprika sweet potato fries is a classic example of how I love to eat.

    Protein, veggie, healthy starch...this is the type of meal my body loves.

    Dessert

    For dessert, I made another favorite...

    I mix Greek yogurt, homemade cashew milk, a bit of stevia, raw honey, and frozen cherries/berries to create a kind of 'slushie' of sorts.

    Such a great end to the night!
