I tried something a little different for breakfast. I reheated some leftover brown rice in some hemp milk with a few dates, salt, vanilla, and cinnamon. Topped with some cold milk, it made for a nice, hearty breakfast!
I snacked on a green smoothie pop in between meals. I make these by blending fresh orange juice, blueberries, kale, and a bit of stevia together and then freezing the mixture in the form of popsicles. These make great snacks for my kids too!
I had more rice for lunch accompanied by ground beef, onion, garlic, cherry tomatoes, a few spices, and a big handful of cilantro. It was delicious!
I’m trying to discover the point at which a cookie becomes a biscuit, so I’ve been lowering the sugar in a few of my favorite recipes and playing with the addition of stevia…
…these turned out pretty tasty, but the ratio of sugar to stevia still needs some adjusting!
Dinner saw the return of one of my favorites…
….Carrot Spaghetti. I love the fact that this meal is made ENTIRELY out of vegetables, and somehow it still feels like an indulgence!
For dessert, I snacked on one of my Snickers cups.
With ZERO added sugar, I never feel guilty about these!
