More of the same in the form of this Choco-Berry Smoothie…
I love this smoothie so much! It gives me a chocolate/sweet fix, as well as an energized focus to begin the day. This day, I added in a big handful of beet greens (just the top, leafy part of a bunch of beets). I got nervous that they would be bitter, but they blended in just as well as spinach or chard.
I’ve been working on a couple of biscuit recipes, which I tested out this day…
This cheesy garlic variety made with coconut flour was a hit with my husband and I, but not so much the kids. Can’t please everyone in this house! :-/
For lunch this week, I’ve been eating a lot of my Spicy Cabbage Soup in an attempt to reset my system a bit. Alongside it, I love to have a cheese crisp, made from my Homemade Spelt Tortillas and raw white cheddar cheese. I’ve been looking forward to this everyday!
As always, I snacked on various fruit throughout this day, namely apples.
For dinner, I had some leftover black rice, so I made a casserole with it…
I added in lots of vegetables, including onion, garlic, carrot, celery, okra, zucchini, tomatoes, kale, and parsley, and then I topped it with some yogurt cheese.
My kids love this meal, so it’s a go-to recipe for us.
Coming next week, I have a delicious fudge recipe for you for Valentine’s Day…
