    What I Ate Wednesday (1/8/14)

    Breakfast

    For no reason having to do with the new year, I've been drinking more juices in the morning...

    My body seems to be craving these fresh juices, so I've been obliging. My typical combination includes two carrots, two celery stalks, two cucumbers, two green apples, 1/4 of one beet, one lemon, and one knob of ginger, and I love drinking them over a glass of ice.

    Snack

    I was playing around with different 'ice cream' recipes this day...

    I tried using a variety of unconventional, healthier ingredients, but I haven't come up with anything solid yet. It's been fun eating the trials though!

    Lunch

    I had a long unused bag of black beans sitting in my pantry, so I soaked and cooked them not really knowing what I would do with them. I used about half the batch for my Black Bean Brownies, and the other half we used in healthy tostadas...

    I made some corn tortillas using masa flour and then baked them in the oven for a bit until crisp. We then piled on the black beans, lettuce, tomatoes, cheese, avocado, and olives. It was such a delicious lunch!

    Snack

    I've been gorging myself on various kinds of sugar-free truffles lately. This particular one is my recent Cinnamon Oatmeal Truffles recipe combined with a bit of cocoa powder. I usually head to the gym in the late afternoon, and these make a great energizing snack.

    Dinner

    Another recipe I've been attempting is a coconut milk-free curry that's both quick and easy...

    This one was vegetable-packed with sweet potatoes, green beans, zucchini, carrots, onions, and red and green bell peppers. I also added in a can of chickpeas and served it over brown rice. It was so hearty and flavorful and really hit the spot.

    Dessert

    If you read this blog with any frequency, then you know how fanatical I am about chocolate and mint, so when I found these at Trader Joe's, I fell pretty hard. Simply chocolate, honey, and mint, these babies are my latest obsession.

      Chocolate and mint is such a fantastic combo. I recently picked up a box of Walkers chocolate mints..not Organic or natural but they satisfy the craving :p. Now I just need a Trader Joes to open in my parts ..

        I used a juicer to make it, and I have tried this before so I knew I'd like it! 🙂

      I SO wish we had a Trader Joe's here in OK...I've heard of so many great products they carry and I would totally buy those Honey mints!! There's a brand called Heavenly Organics that has the same type of yummy goodness! The ingredients are 100% unsweetened chocolate, raw honey and peppermint oil...all organic and to die for! They recently branched out to pomegranate, ginger and almond flavor...delish! Love your blog posts 🙂
