    What I Ate Wednesday (2/10/16)

    Breakfast

    Breakfast is the hardest meal for me to get a picture of, largely due to the fact that it's my first meal of the day, and I just want to eat!

    This morning, however, I captured my elusive smoothie seconds prior to devouring it...

    As with everything lately, even my smoothies have gotten a bit of a sugar 'makeover'. This particular smoothie contained chard, hemp seeds, a spoonful of Creamy Pumpkin Seed Butter, pear, avocado, vanilla, stevia, and cinnamon. The avocado and Pumpkin Seed Butter made it extra thick and creamy!

    Snack

    Wanting something a bit more substantial, later this morning my youngest daughter and I snacked on some Coconut Buckwheat Bread...

    Spread with coconut oil and sea salt for me and butter for Natalie.

    Lunch

    For lunch, I had a large salad, packed full of things you can't really see like lettuce greens, spinach, red cabbage, grated carrot, red bell pepper, cucumbers, raw pumpkin seeds, raisins, and chopped chicken, all topped with a homemade creamy basil dressing.

    Dinner

    Dinner was a new favorite...

    Chicken fajita bowls, with sautéed peppers and onions, chopped chicken, homemade fajita seasoning, garlic, mushrooms, all served with a heaping helping of brown rice and an avocado cilantro sauce. Jadie couldn't get enough of the 'green sauce' and actually wanted it with salad the next day!

    Dessert

    Even though we're well into 2016, I was struck by a craving for a healthy pumpkin fudge this day...

    Oh my, this turned out so good, and I want to post it soon, but didn't know if it would be well received this time of year?...

      Yes, please do post the pumpkin fudge! I also have cans of it staring at me and I can't stand the thought of any more pumpkin chili or soup this week (much as I love both).

      I have a pumpkin shake in the fridge as well as pumpkin custard right now. Is there a season in which pumpkin is not tasty? I freezer enough puree to last all year!

      I'm so intrigued by the pumpkin fudge! It's coming into autumn here in Australia and soon I'll have heaps of pumpkins from my garden, so I say share that recipe so I can put my pumpkins to good use 😀 gosh it looks good! I'm just staring at the photo trying to guess what ingredients you've used haha!

        Haha, it's not so much what I used, but I guess I felt like I got the proportions pretty accurate. Thanks for your comment Kyra, and I'm so jealous of your upcoming autumn season! Wish it was that time here again! 🙂
