    What I Ate Wednesday (2/19/14)

Published: Feb 19, 2014 · Modified: Feb 19, 2014 by Lauren · This post may contain affiliate links · 11 Comments

    Breakfast

I've been using my Nutribullet to make myself nutrient-packed smoothies...

Not pretty, but quite delicious and filling, this one contained hemp milk, avocado, frozen mango, frozen blueberries, raw honey, stevia, and lots of chard.

    Snack

Our whole family loves berries, so when I came across an economy-sized box of them at Trader Joe's, I snatched them right up!

These are actually non-organic, which I hate buying, but I bring them home and soak them in a mixture of grapefruit seed extract and food grade hydrogen peroxide, which I've read is effective at killing pesticides and bacteria.

    Lunch

Lunch this day was a veggie-packed salad...

    IMG_9899

...green leafy lettuce mixed with chopped red bell pepper, cucumbers, red onion, grated carrot, red cabbage, raw walnuts, chopped dried figs all topped with a creamy Italian dressing that I will share soon. If I go a day without a salad, I start having uncontrollable cravings for one, so I try to eat one every day!

    Snack

Some delicious, almost sugar-free black bean fudge energized me for the gym this day...

    IMG_9802

    ...so delicious!

    Dinner

Though I have good intentions with trying other bloggers recipes, I don't often get around to it. Recently, however, I've been making more of a point to do so, and I recently tried Sharon's Curried Chicken and Brown Rice Bowl...

    IMG_9792

...this meal is so delicious and easy to boot! I've seriously made it like five times in the last two weeks, and it reheats well making for great leftovers!

    Dessert

    IMG_9611

I put together a carob chia pudding for dessert. I really like using carob because it pairs so well with stevia (unlike cocoa) so I'm able to make a truly sugar-free treat! I added a couple of tablespoons of oats and a splash of vanilla as well. It made for a satisfying end to the night.

What have you been eating lately?

Oh, never had oats in chia pudding... I have to try. And love carob - I use the unsweetened chips and they taste just like normal chocolate to me!

Hahaha, I love Shark Tank! I checked out the site, but can't seem to find the ingredients! The products all sound good, and I could definitely use a glass cleaner. Right now, I go around with a bottle of vinegar and water, leaving streaks everywhere, hah!
