    What I Ate Wednesday (3/12/14)

    Breakfast

    The most delicious smoothie ever...

    ...I've been playing around with this smoothie for a while and wouldn't you know it, the day I'm haphazardly measuring ingredients, it's the best tasting thing to come out of my Nutribullet in a long time!

    Loosely speaking, this has hemp milk, avocado, walnut butter, dates, raw honey, a modest amount of cacao powder, plenty of frozen berries, and a fistful of chard. Topped with some goji berries and cacao nibs, this energized me for a good deal of the morning! If I posted this, I might even title it 'Make Your Day Better Smoothie', because that's exactly what it did for my morning.

    Snack

    I bought a few local apples, which made a lovely little snack this day. I love my apples crisp and slightly tart (Pink Lady is my favorite), and these were right on the mark.

    Lunch

    I had a large, nutritious salad for lunch, packed full of lettuce greens, grated carrot, red onion, cucumbers, pumpkin seeds, and raisins, all topped with a lemon vinaigrette. Some days I crave black pepper, and this was one of those days, so I topped the salad with a lot of it. 🙂

    Snack

    In addition to black pepper, potatoes are on my mind A LOT lately. I love to eat them roasted with coconut oil, topped with sea salt, black pepper (again), and nutritional yeast. The best snack!

    Dinner

    I made a casserole of spaghetti squash, Homemade Pizza Sauce, caramelized onions, mushrooms, and some part-skim mozzarella cheese for dinner. Topped with a bit of fresh parsley, this was a fantastic meal.

    Dessert

    I made a batch of my Thick Raw Lemon Bars a few nights ago and have been snacking on one (or two) after dinner...

    ...they make a refreshing end to the day!

      Ohhhh lemon bars sound amaaaazing! I love lemony desserts, so yeah...hahaha. And I feel like that happens too often! I don't measure things and throw everything together with my eyes closed, and BAM--the best thing ever, only I don't have the measurements for next time. 😛

      Ok, that smoothie DOES look like the best smoothie ever. I think I need it. I'm definitely in a date-walnut-cacao-avocado kinda mood right now.

      Hey ! Found you website on the WIAW linkup and thought your spaghetti squash looked SO GOOD!!!! I always just roast it and haven't made a casserole with it yet.. On my list of recipes to make thanks 🙂
