I have been having this ice berry mash almost every day…
It has become one of my favorite treats-slash-snacks-slash-breakfasts. This day, I used some homemade hemp milk to make it, and after this picture was taken, I topped it with a good drizzle of raw honey.
I was testing out a recipe that needed avocado, and I literally cut into the Cindy Crawford of avocados!
This one was perfectly ripe, and I couldn’t help but eat it by itself. All it needed for me was a good sprinkle of sea salt.
For lunch, I made a chicken fajita ‘noodle’ bowl of sorts using the leftover half of a spaghetti squash, bell peppers, garlic, and onions, chopped chicken, and myriad spices.
I topped this with some sweet cherry tomatoes and made an avocado basil sauce with the remaining half of my perfect 10 avocado. This was so delicious!
For dinner, I made a fast meatless dish with some leftover rice I had floating around the fridge…
I sautéed some veggies (onion, garlic, bell pepper, tomatoes) and added in the rice along with a can of black beans (though it could have used two cans!). I poured everything into a big casserole dish and topped it with some raw white cheddar. After about 15 minutes, I took it out, sprinkled it with some scallions, and dug in!
For dessert, I made my Healthier Than Grandma’s Apple Crumble recipe, EXCEPT I left out all sweeteners. I figure apples are sweet enough on their own, and I wasn’t disappointed.
I made a delicious homemade vanilla avocado ice cream (I had a lot of avocados today!), which really set it off nicely.
