A little update on my grain-free month….
I’m seriously missing my overnight oats!…I do, however, feel that I notice a positive difference in my digestion, as well as a few other small aches and pains, though, ironically, I haven’t seen much improvement with my eczema, which is why I started the diet.
Today’s What I Ate Wednesday features more of the grain-free meals I’ve been eating, so I hope you enjoy!
My morning started off, as usual, with about 16 ounces of water. I hate using/washing glasses, so I typically drink all of my daily water from my Nalgene bottle, and it just goes with me wherever I go throughout the day!
I had a craving for chocolate this morning, so I threw some almond milk, avocado, frozen banana, frozen raspberries, and cocoa powder into the blender and made the most delicious chocolate raspberry smoothie…
I have a feeling I’ll be making this often! 🙂
For lunch, it was time to pack in the veggies with a salad.
I added some romaine and other darker green lettuce to a bowl along with radishes, cucumber, dried cranberries, toasted sunflower seeds, and grated goat gouda. I dressed it with some walnut oil, half a lemon, and a sprinkle of Herbs de Provence.
I love these cranberries because they’re sweetened only with apple juice…most are sweetened with sugar!
A little while later, I was still hungry, so I prepared a couple of eggs over easy.
I often have trouble not burning my eggs, but these came out close to perfect!
Erin says they’re not good cold, but I enjoyed them both ways! What a great ‘protein’ cookie. 🙂
For dinner, I tried to use up some of the vegetables in my fridge that were on the verge of going bad. Using my spiralizer, I made some zucchini noodles, and sauteed a ‘sauce’ of garlic and mushrooms. Topped with chicken and some soft goat cheese (which melted with the heat of the noodles and made for a heavenly sauce)….
…this made a great little meal!
I finished my night with a few ounces of my favorite dark chocolate.
This stuff is the best!
