Breakfast
In lieu of my normal smoothie, I opted for a more traditional breakfast in the form of eggs and toast...
Two eggs, over easy, with toasted sprouted bread. I slather the bread with local honey and place the eggs on the toast to eat like an open-faced sandwich. My hubby thinks the sweet/egg combo is a bit nuts, but I love it!
Snack
A bit later in the morning, I snacked on a pear along with a spoonful or two of raw cashew butter...
I absolutely love raw cashew butter! It has a natural sweetness and it's so rich and creamy, it's almost like eating a dessert.
Lunch
For lunch, I made myself a large salad...
Lettuce greens, red cabbage, grated carrot, cucumbers, clover sprouts, dried cranberries, and roasted sunflower seeds all topped with a homemade, oil-free yogurt ranch dressing. Yum!
Snack
A bit later in the day, I ate quite a few frozen blueberries, one of my favorite sugar-free treats!
I don't know what it is about frozen fruit or anything, for that matter, but I love it! Sometimes I'll freeze little jars of baby food and eat them like sorbet. 🙂
Dinner
It was just me and my two daughters for dinner, so I made my Zucchini Pizza Crust and topped it with my Homemade Pizza Sauce, part-skim mozzarella, and pepperoni...
I also had a side of caramelized red onions because I love them so much. I used to make caramelized onions and eat them as a snack during a day, hehe.
Dessert
For dessert, I tried my hand at what I might call raw coconut peanut butter cups...
I only added a modest amount of maple syrup to the base and used my Homemade Chocolate recipe to pour atop them. They turned out pretty good!

Growing up my mum used to feed us fried eggs with toast and strawberry jam. I thought it was normal.. up until I discovered it wasn't and people thought I was odd.

I'm with you, I usually have smoothies but I've been wanting something different lately and so I made some overnight oats. I usually like frozen grapes but frozen blueberries sound pretty good, too! Love your "what I ate" posts! There's just something about seeing what other people eat that inspires me to do better.

I laugh because I pretty much eat my eggs the same way you do! Only I slather my toast with this amazing fig preserve that my mother-in-law introduced me to. I am such a sweet/salty fan, that I opt for that combo any chance I get! 😉
