I started off the day with a Smoothie Bowl…
I followed the same recipe I usually do, except I used frozen strawberries as my berry of choice. I really enjoyed them in this, and they paired wonderfully with the chocolate and dates!
I had a craving for BBQ kale chips, so I used the mix from my Brussels Sprouts Chips with a bunch of red kale I recently bought, and they turned out so good! I might like these more than my Cheezy Kale Chips…
Lunch was a bit of a test recipe…
I made tortillas out of cauliflower and eggs (which actually turned out awesome!), and topped them with some ground beef mixed with red onion, garlic, and Homemade Taco Seasoning. I also added a bit of shredded lettuce and chopped cherry tomatoes for freshness.
I partook of another smoothie later in the day. Mango, raspberries, chard, hemp milk, and raw honey made this a sweet, creamy, and nutritious pre-gym snack.
For dinner, I had a vegetable bowl…
I mixed leftover quinoa with roasted sweet potatoes (hard to see), roasted broccoli, and then added a generous squeeze of lemon juice over the top. I roasted the sweet potatoes in a mix of Mexican-flavored spices, including cumin and chili powder, which gave the dish a really great overall taste!
Dessert was a generous piece of an old favorite, my Raw Peppermint Bark Brownies. Chocolate and mint is a year-round favorite for me! 🙂
