    What I Ate Wednesday (4/6/16)

    Breakfast

    This week had me craving overnight oats...

    I made this bowl totally without sweeteners, using vanilla, cinnamon, grated apple, and raisins to help me out in that department. I also mixed everything with my Homemade Coconut Milk, which has a natural sweetness I love.

    I know my sweet tooth has improved so much because it used to be really hard for me to not add honey to overnight oats. Now, I don't miss it!

    Snacks

    I've been working on many a-recipe over here, almost all still in progress to some extent. This chocolate zucchini cake is one of my faves...

    Very low in added sweeteners and totally gluten-free, this 'cake' is yummy, but still a tad too dry to share.

    Another one is this black-eyed pea salad...

    ...eaten with my daughter's Hello Kitty fork, I've really enjoyed having this on hand for snacks throughout a day. I often gravitate towards sweet snacks, but a small bowl of this gives me a few veggies, some protein, and a dose of good fats, which helps keep consistently hungry Lauren sated. No sweeteners or sugar at all in this, and the coconut milk dressing is killer!

    As usual, I also snack on apples and pears (when I can get them)...

    Lunch

    Though rice is typically my grain of choice, lately, I've been craving quinoa...

    ...one of my favorite, easy ways to make it is to saute garlic and snow peas in olive oil for about 30 seconds, then add in some cooked quinoa, cherry tomatoes, apple cider vinegar, and lots of black pepper.

    Dinner

    For dinner, I tried out a paleo-ish casserole of sorts...

    I mixed spaghetti squash, chicken, mushrooms, spinach, tomatoes, and eggs together for the base, then topped it with some raw white cheddar. Even the kids liked this one!

    Dessert

    For dessert, I made a batch of my Peppermint Ice Bark, which, lucky for impatient me, freezes quickly enough to eat within 20 minutes.

      I love overnight oats!!! I haven't had to add sweetener to mine for awhile, but it's because I always mash up a banana in it. I like your idea of the grated apple with the raisins - that sounds super good!
      The black eyed pea salad sounds good!! Would love to hear about your coconut dressing =)

      Something about eating meals with kid's utensils makes food taste 10x better. Not like I would know or anything... 😉 hehe I do it too!
