    What I Ate Wednesday (5/14/14)

    Breakfast

    I started off the day with a delicious, green smoothie. Filled with apple, pear, avocado, chard, raw honey, lemon juice, and hemp milk, this was very energizing with a subtle sweetness perfect for a morning drink.

    Snack

    I came across a product a year or so ago that was called 'Lemon Almonds'. I absolutely loved it, but it carried a hefty price tag. I've kept it in mind for making myself, but since I now don't eat almonds, I employed my favorite seeds...

    I soaked the pumpkin seeds in a bit of fresh lemon juice for a bit, and then added in some salt, garlic powder, and onion powder, and what resulted was nothing short of incredible!

    They had a slight, lemon-y flavor that wasn't puckering, and I could not stop eating them!

    Lunch

    Lunch was a large mixed salad filled with two kind of lettuces, red bell pepper, red onion, red cabbage, cucumbers, celery, grated carrot, raw walnuts, dried figs, and a homemade creamy Italian dressing. So delicious!

    Snack

    I had a crisp Pink Lady apple before heading off to the gym with the family!

    Dinner

    Feeling a bit inspired by Candle Cafe in NYC, I made a Good Food Plate for dinner. I made a batch of quinoa and mixed in some salt, pepper, and coconut oil for one side, then I roasted some butternut squash and beet cubes for another side, and for the final side, I sautéed some shallot, mushrooms, and chard stems (leftover from using the leaves in my smoothies) in a bit of olive oil.

    I spritzed the entire plate with fresh lemon juice and devoured it all!

    Dessert

    I made a raw apple crisp for dessert...

    The apples are tossed with a bit of lemon juice, maple syrup, and cinnamon, while the topping is made with walnuts, oats, chia seeds, and dates. Such a delicious and satisfying way to end the night, and it didn't leave me feeling heavy!

      I love the idea of lemon almonds or pumpkin seeds! What a great idea, I can't wait to try them! I also like to squeeze lemon juice on pretty much everything I eat 🙂

        Thanks girl! I couldn't believe how good they turned out. Usually, I have to test a recipe multiple times, but I guess I got lucky with these. 🙂

      I'm going to try and make that raw apple crisp for an afternoon snack! Looks to die for! Also, lemony pumpkin seeds sound amazing. Must try!

      the pumpkin seed mix sounds divine! i'm going to try that.
      i have some extra kale so i'm going to do more chips, either w/ your BBQ seasoning or i could create a lemon flavor since i'm buzzing on that idea.

      do you have the topping recipe for your apple crisp? YUM!
      question: i only have dried dates. i can hydrate them right? soak in water?

        I don't have the apple crisp recipe yet, but am planning on making it again to write down what I did. Did I say fresh dates in the post? I too use dried. The Medjool work best because they're so soft and large (and freakin' delicious!!).
