I made a delicious Smoothie Bowl this morning, full of the usual chard, avocado, walnut butter, raw honey, cocoa powder, and dates, but with the addition of about two cups of frozen strawberries. I topped it with goji berries and some of this Grain-Free Granola.
I've been working on a date-free raw cookie dough ball recipe recently...
...this recipe is a total winner! My trick is to add a bit of baking soda into the mix to really mimic the actual cookie dough that you would eat prior to baking the treats.
I munched on quite a bit of the batter this day, which is why I'm showing the above photo.
After all that sweetness, my palate needed to be balanced out with some savory/tangy goodness!
I sautéed garlic, mushrooms, and kale in a bit of olive oil before adding in some leftover quinoa. After everything heated through, I spritzed it all with some fresh lemon juice, which really brought out all of the flavors!
I snacked on my typical orange, but I took a new picture (finally)! These really give me a nice mid-day boost of energy!
A large salad was on the menu for dinner this night. Filled with green and iceberg lettuces, red cabbage, red bell pepper, alfalfa sprouts, cucumbers, pumpkin seeds, and raisins, all topped with a lemon garlic dressing. I had made chicken and rice this night, but my stomach was just craving vegetables!
A couple of my Crazy Good Chocolate Chip Cookies ended the night perfectly. These are so delicious, and I love that I only two flours (and NO starches or gums) to make them!
