My Choco-Berry Smoothie Bowls have been fueling me most mornings…
I’ve modified it a bit over the years from the original recipe, eliminating the dates and using a combination of raw honey and stevia to sweeten it.
I also use one tablespoon of cocoa along with one tablespoon of cacao powder. Cacao tends to be more bitter than cocoa, but it contains theobromine, which really gets me amped for my morning workouts!
Fruit in the form of apples and peanut butter is what I’ve been snacking on…
I typically eat at least three apples every day, my favorites being Granny Smith and Pink Lady.
For lunch, I had my Red Lentil Flatbread with a delicious side of vegetables…
I don’t typically dig zucchini, but the way I prepared it, with caramelized onions, bell pepper, and tomatoes, made it so delicious! I sprinkled a bit of parmesan over the top, which really made it awesome.
I made a killer casserole this particular night…
Spaghetti squash formed the base and it was mixed with a cauliflower cream sauce, chicken, mushrooms, shallots, and parmesan. I made a quick breadcrumb topping using Ezekiel toast, which was my favorite part.
For dessert, I happily savored some of my Homemade Chocolate…
These silicone cups make perfect portions for the chocolate, though I may have indulged in more than one this night!
