    What I Ate Wednesday (5/6/15)

    Breakfast

    It was back to my usual Smoothie Bowl this day...

    ...I literally cannot get away from this particular smoothie combo. I always think about making something else and then decide that I'll have wished I just made this! It's my favorite. 🙂

    I was exceptionally hungry, so in addition to Goji berries and cacao nibs, I topped it with some extra protein/calories in the form of my Red Lentil Granola. I love the crunch and flavor the granola adds!

    Snack

    Sort of a snack, sort of a lunch appetizer, if you will, these roasted broccoli and white cheddar stuffed potatoes were the cat's PJs, hehe.

    My husband and I split the lot and we both enjoyed them immensely! They gave me some great PM energy too. 🙂

    Lunch/Snack

    I had a decent-sized salad a bit later in the afternoon, filled with spinach, lettuce greens, grated carrot, red bell pepper, cucumbers, red cabbage, raisins, and toasted sunflower seeds. I topped it with a low-fat balsamic curry dressing that I'm working on, and it really hit the spot!

    Kind of a messy bowl, as I took the picture after a few bites in!

    Dinner

    Dinner saw the return of an old favorite in the form of my Quinoa and Asparagus Salad...

    I absolutely love the blend of flavors in this salad, especially the fresh mint! It makes a really light, yet filling meal.

    Dessert

    Yet another recipe trial, I made raw mint chocolate chip ice cream sandwiches for dessert...

    With a raw chocolate 'cookie' crust with a creamy mint filling, it was hard to stop at just one!

    ...the hubs pretty much downed the whole batch in the space of two days, which just means I have to make more!

      Just made a batch of your Best Ever Chocolate Chip Cookies. I have been making them for the past two years - they are my go-to favorite cookie. Thank you for all the great recipes. Love your videos! Looking forward to making the Quinoa and Asparagus Salad tonight:)
