    What I Ate Wednesday (6/18/14)

    Breakfast

    I've been enjoying adding beans to my smoothies in order to bump up the protein content. This one was filled with apple, pear, frozen mango, frozen blueberries, and about 1/2 cup of cannellini beans. I blended it all with some homemade vanilla hemp milk.

    Snack

    I've been eating tons of grapes right now, but always forget to take a picture! My daughters and I eat them as fast as we get them, and I haven't been quick enough with the camera. :-/

    Lunch

    For lunch, I enjoyed a kind of Greek noodle bowl. I have been craving pasta lately, which rarely happens, so I indulged and bought some brown rice pasta from our local health food store.

    I sautéed some Roma tomatoes and red bell pepper in a good amount of olive oil to create the 'sauce', then I added in some chopped spinach, fresh basil, and chopped Kalamata olives. I also spiced it up with some red pepper flakes and herbs de Provence. It was delicious!

    Dinner

    My lunch held me over pretty well throughout the afternoon, so I didn't eat again until dinner when I prepared a big bowl of quinoa and vegetables...

    I sautéed shallot in some coconut oil, then added in a lot of fresh broccoli, green peas, and cherry tomatoes. I also made a tahini/apple cider vinegar sauce to serve over the top, which really brought out all of the flavors! I'm already craving this meal again!

    Dessert

    I felt more than entitled to finish off the night with a giant Gooey Brownie Bar...

    I absolutely LOVE these! Every time I eat one, I wonder why anyone in this world would want a white flour/white sugar treat. These are so rich and decadent, and the fact that they're so good for you is just the icing on the....brownie. 😀

      Those brownies! Ahh-mazing. I've just polished off an avo mixed with cocoa powder and honey and I can imagine how awesome that in a brownie form would be...
