    What I Ate Wednesday (6/25/14)

    Breakfast

    A different view of my morning smoothie...

    This one is blended with avocado, dates, frozen strawberries, raw honey, raw walnut butter, chard, and cacao powder, all topped with goji berries, bee pollen, and cacao nibs.

    The bee pollen is a new addition to my diet, but I'm really enjoying the energy it's giving me each morning!

    Snack

    A bit later in the morning, I roasted some red potato cubes with coconut oil, sea salt, and pepper...

    Roasted potatoes are a favorite snack of mine, and I love topping them with nutritional yeast!

    Lunch

    A large salad was on the menu for lunch! Iceberg and green leaf lettuces combined with red cabbage, red bell pepper, cucumbers, raisins, and roasted pistachios all topped with a creamy balsamic vinaigrette.

    Snack

    A couple of my Chocolate Chip Cookie Dough Balls gave me a great boost of energy for the gym this day! I can totally understand why the Aztecs ate chia seeds for energy, they are amazing!

    Dinner

    I made a large batch of this Quinoa Stir-Fry recipe for dinner.

    I added in carrots, celery, broccoli, plenty of mushrooms, and a can of water chestnuts. Quinoa is one of my favorites foods, and I eat it at least a few times each week.

    Dessert

    My husband had a birthday this week, so I made him some delicious 'yellow' cupcakes and topped them with chocolate frosting. A few colored sprinkles made them extra special, and we all thoroughly enjoyed these treats! (Recipe coming on Friday.)

      Where do you get bee pollen? At a health food store or online?
      And roasted potatoes? Yes! Potatoes are my life 😉
