    What I Ate Wednesday (6/4/14)

    Breakfast

    I'm sure by now these Smoothie Bowls are getting b-o-r-i-n-g, but it's what I eat!

    This one contained the usual chard, avocado, dates, cacao powder, and raw honey (minus the walnut butter today), and I used frozen strawberries as my berry of choice. I think the strawberries are my favorite in this!

    I topped it with some Easy, Healthy, Breakfast Granola (minus the raisins). I had two of the above bowls, after which I felt quite sated!

    Snack

    I actually munched on some of the same granola throughout the morning...

    I love how quick and easy this recipe is to put together, and it makes a great, energizing snack!

    Lunch

    For lunch I made a stir-fry out of the remnants of random vegetables in my fridge...

    I sautéed garlic, scallions, and ginger, then added in carrots, celery, mushrooms, and cabbage shreds (imagining them to be noodles). I sprinkled it all with a bit of soy sauce and rice vinegar and also added in some red pepper flakes for a little heat.

    It was a nice contrast to all that granola!

    Snack

    I made some lemon pumpkin seeds this afternoon...

    I'm just smitten with these! The slight lemon-y tang coupled with a few various spices, make them irresistible to me, and they're great atop salads or stir-fries.

    Dinner

    For dinner, I made an old favorite...

    These Chicken, Black Bean, and Kale Enchiladas have been posted in the past, but the recipe really needed a makeover.

    This day, I made and photographed them for an upcoming post, and we also ate them for dinner! So delicious and filling, and I almost forgot to snap a picture.

    Dessert

    It was a filling day for me, so I ended the night simply with some strawberries and coconut whipped cream. If I had more energy, I would have mashed the strawberries, but they were delicious this way too. 🙂

      We had peaches and coconut whipped for dessert last night! I just discovered coconut whipped cream and I'm pretty smitten with it 🙂 Also, can't wait your your new enchilada recipe!
