I’ve been drinking a lot of smoothies for breakfast lately…
…this one consisted of frozen mango, hemp milk, yogurt, 1/2 a cantaloupe, 1/2 a zucchini, honey, and stevia. It is really delicious! The mango and cantaloupe go together surprisingly well.
I am a sucker for any frozen treat…grapes, ice cream, popsicles…so when we bought a giant watermelon, into the icebox it went…
….it made for a good little mid-morning treat! 🙂
Lunch was a salad, as usual. This one was filled with a baby lettuce mix, pumpkin seeds, dried cranberries, and roasted sweet potato ‘croutons’.
A little while later, I mixed up a couple of Persian cucumbers with some yogurt, black pepper, and fresh dill…
For dinner, I made my Personal Pan Cauliflower Pizza. This recipe is great on nights when my husband isn’t home because it makes just enough for me.
I wasn’t in the mood for anything really sweet for dessert, so I just snacked on some grapes after dinner…
