    What I Ate Wednesday (7/17/13)

    Breakfast

    I've been drinking a lot of smoothies for breakfast lately...

    ...this one consisted of frozen mango, hemp milk, yogurt, 1/2 a cantaloupe, 1/2 a zucchini, honey, and stevia. It is really delicious! The mango and cantaloupe go together surprisingly well.

    Snack

    I am a sucker for any frozen treat...grapes, ice cream, popsicles...so when we bought a giant watermelon, into the icebox it went...

    ....it made for a good little mid-morning treat! 🙂

    Lunch

    Lunch was a salad, as usual. This one was filled with a baby lettuce mix, pumpkin seeds, dried cranberries, and roasted sweet potato 'croutons'.

    Snack

    A little while later, I mixed up a couple of Persian cucumbers with some yogurt, black pepper, and fresh dill...

    Dinner

    For dinner, I made my Personal Pan Cauliflower Pizza. This recipe is great on nights when my husband isn't home because it makes just enough for me.

    Dessert

    I wasn't in the mood for anything really sweet for dessert, so I just snacked on some grapes after dinner...

      How do you make this sweet potato croutons? They look like the perfect add in for a huge green salad! And seriously: your homemade cauliflower pizza looks totaly like you ordered it in a restaurant - how beautiful the cheese melted on top....

        The 'croutons' are not really croutons in the typical sense, just roasted sweet potato cubes. They reminded me of croutons because of the shape. 🙂

      currently i'm making a mix of raw nuts & seeds (3 cups worth) w/ 1/3c maple syrup, big pinch of pink himalayan salt and it's in the dehydrator. these are WONDERFUL to snack on! very addictive. you're supposed to 'cook' at 110 for 10 hrs but i crank it a bit to 125, so it gets done quicker.
