    What I Ate Wednesday (7/24/13)

    Breakfast

    I'm still on a smoothie kick...

    This one was filled with 2 pears, blueberries, zucchini, stevia, and vanilla hemp milk. Simple, but delicious!

    Snack

    A little while later, I snacked on some cantaloupe.

    I like to just cut the fruit in half and scoop the flesh out with a spoon!

    Lunch

    I tried a different salad on this particular day....

    ...I shredded some Brussels sprouts and mixed them with some pumpkin seeds, chopped apple, and my Date Dijon dressing. The acidity in the dressing is still a bit off, but I plan on posting it when I get it just right. 😀

    Snack

    One of my favorite things to eat is this berry bowl. I mix yogurt, milk (sometimes, I just use all milk as I don't tolerate a lot of dairy very well), frozen blueberries, frozen raspberries, raw honey, and stevia. The frozen berries make the consistency slushy-like, which I love. This has become one of my favorite (healthy) treats!

    Dinner

    I made my Eggplant Quesadillas for dinner using the black bean option. These are just delicious! The eggplant has a bread-like quality that makes it a great substitute for tortillas.

    Dessert

    I've been working on a new chocolate bar recipe. I don't especially care for the taste of honey or maple syrup in homemade chocolate, so I've been making a syrup from coconut sugar and water and using that instead. It takes a little extra work, but it's worth it. 😀

      the frozen berry mix sounds great! you could use full fat coconut milk instead of reg. milk and yogurt. i may have to try that today! the other day i threw some fresh blueberries in some whip cream... YUM!

      Looks like a delicious day of eats. Love the idea of a coconut sugar-based syrup, that's very smart!! As for that salad, yum! Do you steam the brussels first or just shred them raw?

      I really like the idea of almost everything you ate in this post. I especially like the idea of the Brussels sprouts salad, and I'll be interested to see the dressing when you get tweaked right. One of our favorite snacks is frozen mixed berries with Greek yogurt, but I can see where mixing the berries with almond milk (what I would use) would be a nice combo. I'll probably stay with the Greek yogurt, though, because of the protein content. I'm also interested in the chocolate bar; life without chocolate really isn't the best.

      Cannot wait for you to post your date Dijon dressing - triple D! 😀 It sounds great & different. I eat a lot of salads & haven't found many dressings I like.

      Also intrigued by your chocolate bar recipe - BIG chocolate fan here!

      I could totally go for your snack right now!
