So, this happened this weekend…
….leaving me creatively impotent and pretty much dependent on my husband for everything. Not fun.
Luckily, it’s beginning to heal, and I’m slowly feeling like myself again. Time for some normalcy!
Natty and I shared a delicious smoothie this morning.
I blended kefir, kale, a cold banana, hemp milk, frozen mango, and raw honey together for one scrumptious breakfast! It actually tasted like an Orange Julius, which was odd since it had no oranges in it. 🙂
The whole family noshed on cheese crisps for an early afternoon snack.
I’ve been loving the Ezekiel tortillas topped with yogurt cheese. The yogurt cheese is free of lactose and agrees with me better than some others I’ve tried, like swiss.
For lunch, I boiled some Mung Bean Noodles (my latest food obsession), and topped them with some shallot, cremini mushrooms, and kale, all sautéed in coconut oil.
I topped this with some (unpictured) Marinara Sauce, and it made a delicious, healthy, and filling lunch!
My lunch held me over until the evening, when I was craving quinoa.
I made my Chinese Vegetable Stir-Fry and, for crunch, added some roasted lemon-y pumpkin seeds (video to come!).
I love this meal and make a huge batch of it at least once a week!
These decadent, raw caramel-topped brownies satisfied my sweet teeth for the night….
Why on earth would anyone choose white sugar/flour when you can have something so wholesome and delicious?!
