    What I Ate Wednesday (7/31/13)

    Breakfast

    This day saw the return of my favorite overnight oats...

    ...to this batch, I added a rounded tablespoon of peanut butter and left out the yogurt. It was a delicious way to start the day!

    Lunch

    My breakfast was rather filling, so it held me over until lunch when I made a huge salad...

    ...this one had a mix of lettuces, radishes, red onion, cucumbers, raisins, walnuts, and sunflower seeds. I topped it with a lemon herb dressing.

    Snack

    I've been eating my berry bowl quite often lately. I just can't get my fill of the slushy goodness! This one was filled with hemp milk, frozen blueberries, frozen raspberries, a splash of vanilla, raw honey, and a bit of stevia. So good!

    Dinner

    My husband went out with a couple of friends this night, so I made a delicious vegan meal of yellow rice and lentil chili. I just loved the flavors of both, especially the rice.

    Dessert

    For dessert, I made a batch of my Frosted Brownie Cupcakes.

    Instead of ground oats, I used spelt flour and reduced the oil to one tablespoon (using an extra tablespoon of applesauce in its place). They tasted just as delicious as the original, though I do think I'm partial to the oats. 😀

      I love doing berries bowls like that, the frozen fruit just goes so well with the cold nut milk! I have also been loving overnight oats lately, I think it must be the warmer temperatures.

      I finally tried Chobani's key lime pie Greek yogurt and I just can't get enough. It is delicious!!

      What better way to start off the day than with a heaping bowl of overnight oats? That's how I've been starting mine lately! I've been into swapping almond milk for coconut milk it's just divine!

      Lentil chilli?! Ah recipe please?? Looks awesome. I have been lovinggg mug cakes for breakfast. My next experiment is going to be a savory one to add some veggies in the morning.
