    What I Ate Wednesday (7/3/13)

    Breakfast

    On this particular day, I woke up not feeling very hungry, which is unusual for me, but I'd had a rather big dinner the night before and snacked all the way up until the time I went to bed.

    Consequently, I made myself a simple smoothie of hemp milk, an apple, about 1 cup of frozen blueberries,  and about 1/2 of a zucchini....

    Snack

    A while later, I munched on another apple (Pink Lady, to be exact. They're the only kind worth my money anymore!).

    Lunch

    I prepared a large salad for lunch (by this time, I was pretty hungry). Green leaf lettuce, cucumber, carrot, alfalfa sprouts, sugar snap peas, red onion, pumpkin seeds, and goat chevre (aka soft goat cheese) all under a Date Dijon salad dressing I'm working on. It was one of the best salads I've had in a while. 😀

    Snack

    I sampled one two three of these Double Layer Chocolate Cookie Bars for my lunch dessert (lessert?...no.). They are just delicious. They are nut-free so my daughters can have them too. I'm hoping to share them next week after the holiday.

    Dinner

    I made a brown rice and vegetable beef soup for dinner...

    ....this is one both my daughters will gobble up, so I try to make it once a week. That way, I also have leftovers for them.

    Dessert

    Ever since Amber posted these Lime Cream Popsicles, I've wanted to try them!

    We poured some into molds, and drank the rest...

    They have a great balance of sweet and tart, and I will definitely make them again!

      I've been wanting to start sprouting alfalfa again. I really want to try that popsicle recipe as a smoothie. YUM!

      The Date Dijon salad dressing sounds like a good one, kind of a Honey Mustard with dates instead of honey. I only like Pink Ladies for baking, I prefer a more crisp apple for eating, to each his own! The lime cream popsicles have an appealing green color from the spinach and avocado, yet you probably can't taste them with all the lime juice and honey in the recipe. Can you?

      Loving your eats! Especially the smoothies, salads, and cookie dough bar! Looks awesome.
      I literally can't stop eating both salads and smoothies - they're all I want in the heat.

      I've been wanting to make my own popsicles. The salad and bars look fabulous. I have a date cashew dressing on the blog and it's one of my favorites, so I can't wait to see your date dijon recipe.
