For breakfast, I made this berry slushie bowl of sorts.
I combine kefir, hemp milk, a mix of frozen berries, some vanilla, stevia, and raw honey in a large mug, and then mix it around a bit. When I mash the berries with my spoon, it creates a kind of slushie texture that I love!
Nothing fancy, just some organic grapes. My favorite way to eat these is frozen, but on this day, I just couldn’t wait!
For lunch, I had a variety of things in the fridge that needed to be used, including some chicken, rice, and random vegetables, so I threw them together to make this tasty curry dish…
This actually turned out pretty well, though next time, I would ease up on my turmeric. It sort of overpowered the rest of the flavors!
The afternoon was spent testing a new oatmeal raisin cookie recipe…
How I don’t have a recipe for these on the blog already, I do NOT know. They are my fave, and these were absolutely delicious. I’ll post the recipe soon!
Healthy chow mein…
I have been craving carbs lately (can’t you tell?), so a vegetable version of the Chinese classic was in order!
This was so good. My husband kept going back for more, while proclaiming how much he loved the dish. I haven’t had Chinese food in so long, so it was nice to eat a cleaned up variant of one of my old-time favorites.
Even MORE carbs, but it was so worth it. I combined spelt flour with a small amount of sweetener, stevia, cocoa, and orange juice to make these scrumptious, fluffy treats. There’s always room for chocolate! 🙂
