I’ve been enjoying loads of watermelon recent mornings! I haven’t been extremely hungry first thing in the morning, so this gives me just enough energy to power through the early part of the day.
I love to sprinkle it with this mineral salt, as it really brings out the watermelon’s natural sweetness.
I snacked on a failed cookie recipe later in the morning….
…the taste was there, but it obviously needs some help in the execution department!
Given me meager morning vittles, a large Cauliflower Pizza was in order for lunch time!
Like last week, I quadrupled my recipe, making enough for my daughters and I to share heartily. If my husband had been home, I think I would have had to multiply everything by eight!
I had a side of sautéed greens on the side for extra nutrition. Truth be told, I had chard and kale going bad in my fridge and couldn’t bear to see it end up in the trash. I just heated some olive oil and garlic, added in the greens for about 2-3 minutes until they wilted down, and then topped them with some sea salt, pepper, and a splash of apple cider vinegar.
My dinner was inspired by something similar I saw on Instagram.
Eggplant slices roasted with olive oil and soy sauce, more sautéed chard with cremini mushrooms and a bit of tahini mixed in, and short grain brown rice with a dash of soy sauce and lime juice to give it a Chinese take-out taste. Everything was delicious!
And for dessert, a recipe I’m working on…
…raw chocolate-covered cheesecake bites. Inspired by my husband’s love for cheesecake, but these really blew me over too!
