Breakfast (8am)
Light breakfasts like smoothies and fruit have been on the menu this week, as I've been less hungry in the morning...
...this is my Berry Good Smoothie recipe with an apple thrown in for extra sweetness.
Snack (11am)
A bit later, I made myself some scrambled eggs with shallot, mushrooms, shredded kale, and some pepperjack cheese...
...cheese doesn't always agree with me, but I absolutely love it mixed in with eggs!
Lunch (1pm)
As usual, I had a big salad for lunch. Mixed greens with cucumber, radishes, sprouts, raisins, walnuts, and sunflower seeds. I made a refreshing lemon and olive oil dressing for the top, and it really boosted my energy for the rest of the day!
Dinner (5pm-ish)
My lunch kept me pretty full until around 5pm when I made myself a quinoa and vegetable stir-fry...
This has been one of my favorite dinners lately. I add in carrots, celery, green cabbage, and water chestnuts which give it a nice crunch!
Dessert
I'm in the midst of making recipes for Halloween and October, one of which just happens to be healthy Snickers bars. For my most recent batch, I had a bit of the caramel layer leftover, so I made truffles out of it...
These were so good, I may have eaten all the scraps, haha....no, but seriously.

Haha I love it... the scraps are the best part! I really like your WIAW posts. I was just curious... have you ever written a post on the purpose of rotating your foods and how you do it? If so I would love to read it! I've been developing a few allergies and I've heard that rotating foods can help with that but I'm not sure how to go about it. I would love to hear how it works for you!

Mmm I'll take any of those other caramel scraps you have lingering around! I can't wait for the snickers recipe! Your stir fry sounds so good! I love water chestnuts, but I always forget about them. I'll have to pick some up and make a Lauren-inspired stir fry for myself.

well bummer! 🙁 whenever i see a blog or someone that truly believes in a product, i'm a sucker... i buy it! but now i always make sure it's natural. if i find out any other products i'll let you know! i'm sure you do your research also 🙂

the eggs look good! i've been craving eggs/dairy lately. especially cottage cheese... weird. anyway, this morning i bought 'Egyptian Magic' balm for skin and hair. you should check it out! i thought of you because of your skin conditions. i've also reordered Raw Black African Soap (i believe i mentioned it before). i do not have skin conditions but am always looking out for the BEST stuff! have a great day!

Thank you Dawn! I've actually used Egyptian Magic on and off for a number of years. It's a great moisturizer, but I didn't see much improvement with my eczema. I also tried the black soap (I bought two different brands), but neither did much for me. 🙁 I always appreciate any ideas and info you have to share though! I think my trouble is truly arising from within, so no amount of topical salve will do much for me. Wah!
