    What I Ate Wednesday (9/25/13)

    Breakfast

    I made my Paleo Chocolate Smoothie this morning...

    ...instead of cocoa powder, I used raw carob powder, and I used raw honey in place of the dates. I also reduced the amount of liquid to make it thicker and eliminated the almond extract to avoid any allergy complications. The avocado makes it so rich and creamy!

    Snack

    I had a craving for a healthy, fruit-based treat, so I made my own kind of 'raw' applesauce...

    ...I just grated a Pink Lady apple and added some cinnamon, lemon juice, raisins, and about a teaspoon of raw honey. It hit the spot!

    Lunch

    I had some leftover broccoli soup from a previous night, so I warmed it up for lunch...

    ...I have yet to post this recipe, but it really is delicious. I make a 'cream' base from cauliflower and puree everything to make it nice and smooth.

    Snack

    I enjoyed a bowl of grapes before dinner. It's the last batch of the season, and while it makes me a bit sad, I'm happy to welcome all of the lovely apples and pears that signify autumn!

    Dinner

    I made a vegetable 'chow mein' using cabbage shreds as noodles....

    I added in some carrots, celery, mushrooms, and water chestnuts along with some soy sauce and rice vinegar. It was really delicious! I wasn't sure about the lack of rice or quinoa, but I really enjoyed this.

    Dessert

    My fun-sized Snickers' recipe is finally complete, so I've been enjoying them immensely...

      LOVE cabbage saute! Just made some last nigh with onions and crisp red apples. I threw a few chicken sausages in there and bam. Dinner is on.

      Great lineup of recipes - that smoothie looks so good right now!! Love your little healthy Snickers too - so cute. I will be sharing a raw tootsie roll treat soon (on a stick). There are so many ways to healthify Halloween. My kiddos don't eat candy and I'm proud of that. They can go crazy when they are older. But while mommy is in charge, my homemade versions will have to do. No complaints yet on this end. 🙂

      Your raw apple treat sounds heavenly. I may just have to try that one. I like that it has more body/substance than regular applesauce.

      It's hard to choose the best thing I've eaten this week. I think it's a toss-up between the Lentil Enchiladas from Peanut Butter & Peppers and The Spiffy Cookie's Peach Chicken with Balsamic Glaze.

      This looks like a day-in-the-nutritional-life Wednesday that I need to make my own!...Your BEST EVER!!..

      Needing.. your SUBLIME recipe for your "cabbage-shred" creation (without the grain I see as just FINE!)...with carrot/celery/water chestnut and soy sauce/rice vinegar proportions....or did you "wing" it ?!...Also, obviously, the fun-sized "Snicker" healthified...would be much welcomed in our household...and appreciated....

      ooooo, can't wait to try the Snickers recipe! and i believe i may make the smoothie right now, it's breakfast time. The applesauce recipe... PERFECT for my grandmother. she'll love it! ALSO, have to tell you about a new skincare item - carrot see oil. have you tried? been using it for about a week on my face and i can see a difference. just watch TV at night and rub it in. now, it has a musty smell which you have to get used to. have you tried?

          found a guy at the farmer's market that sells it but also found a site online "www.bulkapothecary.com". i looked up 'carrot seed oil' online and saw all the benefits. and it's not orange which will discolor your skin, as we know.
          i mainly have sun spots 🙁 i'm a sun worshipper... oh well. but i can see a slight difference.
          it's about $10 for 1/2 oz, but it lasts! give it a try. and remember it has a funky smell.
