I’ve been in the mood for eggs lately. I saute chopped shallot and mushrooms in a bit of coconut oil and add three eggs, chopped spinach, and nutritional yeast. The protein keeps me full for hours!
Kale has been on sale at our local health food store, so I’ve been making a batch of easy, cheesy kale chips just about everyday! They’re so healthy and delicious!
For lunch I had a leftover quinoa curry dish I made for the previous night’s dinner…
…complete with sweet potatoes and peas, this tasted even better the next day!
I had a Pink Lady apple before heading to the gym this particular afternoon. I don’t like to eat a heavy meal before working out, so an apple is perfect!
I think my most creative meals come when I have LESS ingredients to work with…
…hence, this carrot spaghetti. This was one of the most delicious, on-the-fly meals I’ve ever made! I made carrot ribbons and added in sautéed shallots, mushrooms, and pasta sauce. Yum!!
Since I ate such a healthy dinner, I felt completely justified in indulging in a decent chunk of my Cookie Bars….
…what a great end to the night!
