    What I Ate Wednesday (9/9/15)

    Breakfast

    I tried out a new oatmeal pancake recipe this week...

    Sorry for the horrible picture, but I was cutting them in half to make sure they had cooked through!

    In lieu of making a big batch for everyone, I've been wanting a single serve pancake recipe that I can make for myself on mornings when Jade has school and we all eat different meals.

    I made these sugar-free using mainly oats, applesauce, and eggs, and topped them with coconut oil and plenty o' cinnamon. Yum!

    Snack

    I've been eating tons of fruit lately, mainly in the form of apples, pears, and grapefruit!

    I especially love ruby-red grapefruit, and I even eat a good portion of the white pith, as I enjoy the soft texture it has.

    Lunch

    For lunch, I had some leftover quinoa and other random vegetables in the fridge, so I made a little stir-fry of sorts.

    I sautéed some garlic in olive oil and added in a big handful of chopped rainbow chard, along with a large Roma tomato. After stirring in the quinoa, I sprinkled it with some apple cider vinegar and a few raw pumpkin seeds.

    Alongside, I had a big portion of roasted Brussels sprouts. After roasting, I like to drizzle them with some balsamic vinegar. I really enjoy the sweetness the vinegar adds to the Brussels sprouts.

    Pre-Workout Fuel

    It's such a great energy boost for my afternoon workout.

    Dinner

    For dinner, I made my Coconut Flour Pizza.

    I absolutely love this recipe and am hoping to share a video for it soon!

    Dessert

    I've had this idea in my head for individual 'ice cream' cups topped with a layer of crunchy carob 'chocolate'. Good in theory, but I have yet to actually execute it well...

    ...that doesn't stop me from eating the trials though. 🙂

      Single serve pancakes are always the name of the game for me 😉 Every Saturday and Sunday, it's pancakes!
