    What I Ate Wednesday (4/3/13)

    For this month, I'm joining back in with What I Ate Wednesday to depict the grain-free meals I'm consuming, and, hopefully, help anyone looking for some recipe ideas. 🙂

    Breakfast

    My mornings always start with about two glasses of water (unpictured) to get myself rehydrated from the night.

    This particular morning, I juiced a delicious drink inspired by Phil Staples movie, 'Fat, Sick, and Nearly Dead'.

    Whenever I do this, it really gives me a great start to my day!

    A little while later, I scrambled myself 3 eggs and added a couple of tablespoons of cottage cheese, which made them so delicious!

    It also gives me the extra protein punch I need to stay full until lunch. 🙂

    Lunch

    For lunch, I made myself a huge salad with romaine lettuce, cucumbers, radishes, sprouts, roasted sunflower seeds, raisins, and a cut up hard-boiled egg.

    I love homemade dressings, but I get so lazy sometimes, so I end up drizzling on a couple of tablespoons of olive oil, the juice of one lemon, a pinch of salt, a few grinds of pepper, and a sprinkle of Herbs de Provence.

    A little while later, I whipped up a strawberry 'milkshake' with almond milk, frozen strawberries, and a little honey.

    My daughters and I devoured this! I'll have to record the exact measurements so that I can post the recipe! 🙂

    Dinner

    For dinner, I made my own version of the infamous cauliflower pizza that has been floating around....

    ...I can't seem to get the crust to crisp up like I'd like, so I prefer my Zucchini Pizza Crust for that reason. The taste was good though!

    I ended my night with some Trader Joe's dark chocolate...

    I absolutely LOVE this stuff! I'm allergic to soy, and it's one of the few brands I can find without soy lecithin in the ingredients list. 🙂

      I do the same thing as a dressing for my salads when I'm too lazy to make a dressing. It's just as delicious though I find 🙂

      Your eats for the day look so good! I try to start out with at least one glass of water in the morning but maybe I should try two 🙂 I love Tj's dark chocolate! Sooo good. Also, Darin weekly requests your Arby's seasoned fry recipe. He loves them!

      I have never thought of adding cottage cheese to scrambled eggs before, I will have to try it!
