Breakfast
I can't seem to get enough of my Socca Pancakes....
...I just LOVE that peanut butter syrup!
I can't have too much sugar/sweetener in the morning without crashing pretty hard, so mixing the maple syrup with the peanut butter eliminates that feeling.
A while later, my husband and I shared a plate of scrambled eggs...
...I threw in some broccoli pesto, garlic, and cheese for good measure. 😉 They were delicious!
Lunch
As usual, I enjoyed a large salad for lunch...
...mixed greens and romaine, cucumber, radishes, raisins, sunflower seeds, walnuts, and some unseen chicken....I dressed it with the juice of one lemon, a drizzle of olive oil, and this new-to-me spice blend...
...I ran out of my usual Herbs de Provence and decided to give this one a try. Yummy! I like that it has added kelp, as I know this is good for thyroid function.
Dinner
Dinner was chicken with spices and a bit of grated raw milk cheddar along with a side 'salad' of quinoa tabbouleh (recipe to come)...
...I ended the night with some gluten-free Thin Mints...
...these test cookies don't look like much, but this recipe is fantastic! I can't wait to share it with you!

Funny that you made thin mint cookies, bc I'm currently eating a mint smoothie bowl =) I bet one of your cookies would go awesome in my smoothie!

I can't wait to try the thin mint recipe! They are one of my favorite treats, and I'd love a healthier version. Also, the peanut butter syrup looks so good. I will have to try it because nut butter is too thick for me in oatmeal or pancakes. Thanks for the idea! 🙂
