    What I've Been Eating Lately

    Up until recently, my meals have been less than interesting, hence the absence of 'What I Ate Wednesday'.

    I was experiencing so much nausea and food aversion that I wasn't making much of anything noteworthy (a lot of eggs...).

    While this baby is still demanding his eggs, he's allowed me a bit of variety, which I thought would be fun to share today! More of a general overview, rather than a specific day's worth of eating. 🙂

    Breakfasts

    Breakfasts LARGELY consist of smoothies, which in the first trimester was the absolute ONLY way I was able to get a vegetable down.

    My favorites include my Choco-Berry Smoothie Bowl and a new one I hope to share Friday consisting of apples, pears, avocados, and dates (a favorite with my daughter Natalie as well)...

    Snacks

    Snacks have run the gamut from dried fruit, namely raisins, prunes, and apricots....

    ...to hard-boiled eggs...

    ...fresh fruit...

    ...Mint Chocolate Fudge Truffles (sadly, my last two this day)...

    ...and more smoothies (this one was made with a combination of walnuts, banana, sheep's yogurt, and dates, and it was just delicious!)...

    Lunches

    Salads and sandwiches! That about sums up my lunches. The above is topped with a yogurt ranch dressing and is filled with green leaf lettuce, grated carrot, red bell pepper, and chopped chicken breast. Just looking at the picture makes me want that meal now!

    Sandwiches have alternated between a curried egg salad (I told you this boy loves eggs) and My Favorite Pregnancy Sandwich, filled with good fats from the sardines...

    Dinners

    I'm struck with bread cravings quite a bit some nights, so in lieu of downing the carb-laden fluffiness, I make my Red Lentil Flatbread, which really hits the bread spot! I love a generous spoonful of coconut oil and a pinch of sea salt atop it to complete the fantasy. 🙂

    Other favorites include my Vegetarian Fried Rice (more egg, hah), and pretty much anything in stir-fry form...

    I'm also a big fan of my own Creamy Lemon Broccoli Soup (the above flatbread is delicious dipped into the soup!)...

    ...and for those vegan nights, salad (topped with a creamy parsley dressing), a portion of rice and black beans, and a side of sautéed spinach...

    I've been working on quite a few dinner recipes, as I feel my desserts kind of overtake the blog at times, so I'm currently trying to de-nut my Zucchini Pizza Crust recipe...

    This attempt was a quite successful, so I'll be sharing it soon!

    Dessert

    Desserts have kind of centered around fresh fruit or chocolate.

    My Favorite Hot Chocolate with real whipped cream, chocolate avocado pudding, these Pudding Pops, and my 5-Ingredient Homemade Chocolate are all favorites!!

      I can't wait to try your Red Lentil Flatbread! I love red lentils, but have not used them for bread before. Thanks for the idea, Lauren 🙂

      You are eating so well! Our eating style looks so similar right now (give me allll the eggs) but now I feel inspired to whip up some socca!

      Those all look seriously delicious! One of my biggest regrets is not eating better when I was pregnant with my boys (they are 2 and 4). I ate somewhat healthy, but had a severe sweet tooth and consumed way too much white sugar, and processed foods. Now that I am eating so clean and healthy, I have a lot of remorse about pouring all that junk in my body at a time when it was so important to eat well. Wish I had followed your blog back then. 🙂

        Aw, thanks Kelly! It was definitely hard for me to eat healthy at first too, so I know where you're coming from. 🙂 I'm happy you're reading now at least!! 😀
