I thought she did a great job, but the movie was lackluster. Womp, womp.
I'm a huge fan of cinnamon and, consequently, a huge fan of the cinnamon roll.
What I'm not a huge fan of is the sugar, hence today's lower sugar facsimile.
I created this no-bake cinnamon roll years ago in the midst of the overnight oats craze.
It's an ode to one of my favorite treats, only made healthy and in the style of overnight oats.
This little beauty is one tasty recipe!
Packed full of nutrition, lower in sugar, and high in protein....how could you not want to make this every morning?!

No Sugar Added Cinnamon Overnight Oats
Overnight Cinnabuns with Chia 'Frosting'
Ingredients
CINNAMON ROLL:
- β cup oat flour
- pinch baking soda optional, gives it a cookie kind of taste
- couple dashes sea salt
- Β½ tsp cinnamon
- 1 Tbsp nut or seed butter
- 1 Tbsp applesauce
- 1 tsp maple syrup
- 1-2 Tbsp milk of choice
FROSTING:
- 3 Tbsp plain yogurt
- 1 Tbsp milk of choice
- Β½ Tbsp chia seeds
- few drops stevia
Instructions
CINNAMON ROLL:
- Mix the first four ingredients (flour through cinnamon).
- Cut in the almond butter (as you would if you were making shortbread). It should look like little pebbles.
- Add in the applesauce, maple syrup, and 1-2 tablespoons milk (start with one) to make a 'dough'. It should be a bit sticky to the touch, but not so much that it doesn't come off of your fingers.
- Form the dough into a cinnamon roll-shaped disc.
- Place it in a bowl and cover it. Let sit in fridge overnight.
FROSTING:
- Mix all ingredients for the frosting and pour into a small container to thicken overnight (covered, in the fridge).
- Spread the frosting atop the roll in the morning, and top with more cinnamon, if desired.

You can use yogurt in place of the applesauce in the cinnamon roll part.

Oh my, this looks wonderful! Perfect balance of fiber, protein and healthy fats. Can you substitute anything for the maple syrup that isn't an added sugar like honey/agave? And yes, I did just see the new Lucy movie, and I agree it was subpar. I'm a hardcore I Love Lucy fan, but the plot made it seem so unraveled and depressing offstage.

Also, about the sunbutter... I have found that adding a little lemon juice when I'm baking with it helps to eliminate the discoloration. Hope that helps! π

Thanks for the Cinnabon recipe! My son LOVES this! I've made several times. However I made with organic sunbutter just last night and by morning it was completely green on top and had a slight smell like spirulina. Do you think think the sunbutter caused this? I've made before with homemade almond butter and store bought peanut butter with great results. Let me know if you or anyone else has experienced.

Hi Sherry! I'm so happy you like the recipe...it's one of my favorites too! Yes, I think the green color is normal with Sunbutter. I'm not sure what causes it, but I have read that others experience this as well. π

Oh lordy...Lauren! These bfasts look so delicious! Although I love bfast foods, my repertoire's been exactly the same for the last couple of weeks. Pb&j and eggs..I have to leave the house at 5:30 every morning so I don't have time nor the sanity to make anything...I should go back to making some overnight oats..but then I'm so tired in the evenings too..haha.How are you? I used to eat cinnabuns all the time...when I was little, obviously...when I didn't know any better..But I do miss them..your version sounds like something I can put in my body ;). And chia frosting? You're a genius π
