My (Current) Favorite Salad Dressing

This creamy salad dressing is my current favorite to pour atop my salads! Made with a sneaky vegetable that lowers the fat content.

Ingredients

  • 3/4 cup water
  • 1/4 cup apple cider vinegar OR lemon juice
  • 3 Tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 Tbsp Dijon mustard
  • 1 large garlic clove
  • 1 Tbsp shallot OR 1 scallion
  • 2 medium zucchini sliced into rounds

Instructions

  • Blend all the ingredients until silky smooth.
