Ingredients

  • 1 1/4 c . buckwheat flour , ground from raw buckwheat groats
  • 1/2 t . baking powder
  • 1/2 t . sea salt
  • dash powdered stevia extract , optional
  • 1/2 c . semi-soft coconut oil
  • 2 T . coconut sugar
  • 1 egg
  • 2 t . vanilla extract
  • 1/3 c . chocolate chips

Instructions

  • Preheat the oven to 350 degrees.
  • Mix the flour, baking powder, salt, and stevia (if using) in a small bowl.
  • Beat the oil with the sugar until fluffy.
  • Beat in the egg and vanilla, just until combined.
  • Stir in the flour mix and chocolate chips.
  • Roll the batter into balls and flatten them onto a parchment paper-lined cookie sheet.
  • Bake 14-16 minutes, until lightly golden.
  • Allow cookies to cool for 5-10 minutes before moving.
  • Enjoy!
