Chocolate Chip Cookie Cups (No Added Sweetener)

Ingredients

  • 15 ounce can white beans or chickpeas (I like Great Northern best), rinsed and drained
  • 1 T . nut or seed butter (see Notes)
  • 1 T . coconut oil
  • 2 T . oats
  • 2 T . applesauce
  • 1 T . vanilla extract
  • 1 t . baking powder
  • 1/4 t . baking soda
  • 1/8 t . sea salt
  • 1 t . cinnamon
  • 1/3 c . chopped chocolate

Instructions

  • Preheat oven to 350 degrees.
  • Process all the ingredients (except chopped chocolate) until very smooth.
  • Pulse in the chocolate.
  • Divide the batter among nine paper muffin cups.
  • Bake 25-30 minutes.
  • Cool 10-15 minutes.
  • Enjoy!
